HERBS IN FLOWER ARRANGEMENTS

This time of year my herb garden is typically erupting with foliage. I like to keep my herbs cut back and productive, but mid-summer often produces more than I can use in cooking. The extra clippings go into flower arrangements to compliment blossoms with colorful foliage, texture and aroma. Try these herbs in your next arrangement:

Texture: Dill and fennel offer delicate fine-textured foliage. These herbs may initially wilt upon cutting but will perk up in the vase.

Color: For sensational silver foliage and a fine aroma try rosemary or lavender in an arrangement. Sage offers a coarser texture, and depending on variety, a touch of purple.

Greenery: Basil and parsley offer a backdrop of simple green to showy blooms. Basil keeps well in a vase and may even sprout roots.
